Centre Piece Cake
This is a fake cake with only a real top tier to cut. This means that the first tier is made of cake but all other tiers are fake, made of Styrofoam. Every tier is covered with either fondant or modeling chocolate and decorated. The finished look is a beautiful wedding cake that can remain in front of your guests as a show piece all night. There are several benefits to this kind of cake. If you have always dreamed of having a seven tier show stopping cake, but don't have an unlimited budget, this centre piece cake is a great alternative. Your cake can also remain in your dinning hall as part of the decor because it does not need to be taken away, cut, and served to guests. Also, a centre piece cake remarkably cuts down on the time it takes to cut and serve cake to guests. A centre piece cake has corresponding, "slab cake" that is easier to cut and serve. A three tiered real cake usually take an hour to cut and serve, whereas slab cake for the same amount of people takes approximately twenty-five minutes.
Sculpting a cake allows for endless design possibilities. From a simple kid's teddy bear to complex designs that trick the eye into disbelieving that the sculpture is cake. I will work with you to create the design and theme you are looking for. A sculptured cake can look like other foods, such as pizza or a hotdog or any inorganic object such as a building or a pair of shoes.
I use Italian meringue buttercream, which contains a simple sugar syrup, and no icing sugar, so it's light and frothy and melt-in-your-mouth delicious. The cupcakes in this picture have been created completely from buttercream.

If you need the perfect centre piece or the perfect display that will get people talking, edible art is a great option! The field is wide open to the possibilities of materials to use and draw inspiration from. I will meet with you and come up with that perfect design for your event. From the office appreciation party to the birthday celebration to the wedding show piece, edible art is a great possibility.
Edible flowers can be the perfect touch to make your cake step up to the next level. Gardenia and Orchids are present in this photo and I can create any flower you like. Let your mind imagine the possibilities with edible flower details. These flowers may cover your cake or be the perfect accent piece. Any design is possible!
This look is created with royal icing and a fine paint brush. This artistic touch is traditionally flower details, however I can use this technique to branch out depending on the look and design behind your cake.
There are many ways to pipe details. This image is only one example of scroll work in fine detail. I am able to create any look you are going for - from simple and elegant to ornate.
Modeling Chocolate Details
Modeling chocolate is a medium similar to clay. Spiritual Ingredients can create almost anything out of modeling chocolate. From animals to flowers to cartoon stuffies to the Leaning Tower of Pisa, there are just so many possibilities. With modeling chocolate the details of each piece can be very fine, realistic and specific or relaxed and more abstract. This medium is my favorite to work with.
Gum paste is a lot like modeling chocolate due to its versatility. However, gum paste dries very hard and brittle so it must be worked with delicately. Gum paste can be dyed any color and it can also be painted which allows excellent details to show through. I would recommend gum paste for a limited number of items. I prefer to work with modeling chocolate as it is just as beautiful and it tastes like chocolate!
