I am a pastry chef and cake artist who happened upon an ice cream shop that I fell in love with. But pastry and baking are all essentially chemistry. The right ingredients, combined with the right techniques, taken to the right temperature produces a delicious product. But so is gelato and ice cream! And since we are NUT-FREE we soon realized that no ice cream or gelato company could guarantee their product didn't come into contact with nuts. We can. After trying our hand at fresh gelato made with no preservatives, we realized quickly that it just wouldn't keep longer than a couple of days and we threw too much of it away to be both environmentally and economically responsible. So we came up with a great idea to make it into ICE CREAM BARS instead. And dip some of it in our fabulous fair-trade Belgian chocolate!!!
